the ingredients ...





for a date, orange and walnut loaf ... recipe below.
grey skies, days of pouring rain, few light hours ... time for baking cakes ... enjoy! :) .p

date, orange and walnut loaf
based on this recipe I made my own with slight changes ... mainly I introduced orange juice and rind which I find goes very well with dates

* 1/2 cup (50 grams) walnuts toasted and coarsely chopped
* 8 ounces (225 grams) pitted dates, coarsely chopped
* 1 teaspoon baking soda
* 1/2 cup (150 ml) boiling water
* 2 cups (260 grams) all-purpose flour
* 1/2 cup (110 grams) light brown sugar ... here I used demerara because I didn't have light brown
* 1 1/2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/2 cup (110 grams) cold unsalted butter, cut into pieces
* 1 large egg
* 1 orange

* preheat oven to 350 ºF (180 ºC) and place rack in center of oven
* grease and flour a 9x5x3in (23x13x8cm) loaf pan
* toast the walnuts on a dry frying pan for about 8 minutes or until lightly browned and fragrant, let cool and then chop coarsely
* in a bowl mix the chopped dates with the baking soda and a pinch of salt, pour the boiling water over the dates, stir and leave to cool to room temperature
* in another large bowl mix very well the flour, sugar, baking powder, salt and ground cinnamon
* add the butter and mix until the mixture resembles coarse breadcrumbs
* stir in the chopped walnuts
* in a separate bowl, whisk the egg with the rind and juice of the orange
* finally, fold the beaten egg mixture and the cooled dates (with their water) into the flour mixture
* stir until combined
* scrape the batter into the prepared pan and bake until the loaf has risen and a toothpick inserted in the center comes out clean, about 1 hour
* place on a wire rack to cool and then remove from the pan
* well wrapped, it will keep for several days at room temperature

ingredientes para um bolo de tâmaras, laranja e nozes ... receita em baixo.
dias cinzentos, muita chuva e pouca luz natural ... é tempo de fazer bolinhos ... divirtam-se! :) .p

bolo de tamâras, laranja e nozes
baseado nesta receita fiz este bolo com algumas alterações ... principalmente introduzi sumo e raspa de laranja que acho fica lindamente com as tamâras

* 50 gr nozes tostadas e picadas grosseiramente
* 225 gr tamâras sem caroço e cortadas aos bocados
* 1 colher de chá de bicarbonato de soda
* 150 ml água a ferver
* 260 gr farinha sem fermento
* 110 gr açúcar amarelo
* 1 1/2 colher de chá de fermento em pó
* 1/4 colher de chá de sal
* 1/2 colher de chá de canela em pó
* 110 gr manteiga sem sal cortada aos bocados
* 1 ovo grande
* 1 laranja

* aquecer o forno a 180 ºC e colocar a grelha a meio
* untar e polvilhar de farinha uma forma de bolo inglês com cerca de 23x13x8 cm
* tostar as nozes numa frigideira seca durante uns minutos, deixar arrefecer e picar grosseiramente
* numa tigela misturar as tamâras cortadas com o bicarbonato de soda e uma pitada de sal, juntar a água a ferver, misturar e deixar arrefecer
* numa tigela grande misturar a farinha, o açúcar, fermento em pó, sal e canela
* juntar a manteiga e misturar muito bem até desfazer bem a manteiga e parecer "pão ralado" grosso
* juntar as nozes
* numa tigela separada bater o ovo com o sumo e raspa de laranja
* finalmente envolver bem a mistura do ovo e a das tamâras já frias (com a àgua) na mistura de farinha
* colocar dentro da forma préviamente preparada e levar ao forno cerca de uma hora (para testar inserir um palito no centro do bolo e se este sair seco está pronto)
* deixar arrefecer e desenformar
* mantém-se bem durante vários dias se for embrulhado em papel de alumínio
