rococo cookies

these are still warm and out of the oven ... so easy and nice with a cup of coffee or tea! :) ... an adaptation of an old family recipe

rococo cookies
*1 cup sugar
*1/2 cup melted butter (I normally use extra virgin olive oil instead as I tend to avoid butter)
*1 medium egg
*rind of a large orange
*2 cups of fine oats
(for a more decadent version you can also add 1/2 cup chocolate chips and a handful of sliced almonds or hazelnuts)
mix everything very well  · with your hands shape little balls the size of a walnut · place on trays lined with baking parchment and press with a fork to make them slightly flat · goes in a pre-heated oven 180ºC until golden · let them cool a bit before removing from tray
