tea and biscuits



*vegan oaty biscuits*
yesterday I made some biscuits based on these ones but thinking of a vegan alternative ...

this is the base ...
* 1/2 cup demerara or muscovado sugar
* 1 tablespoon corn starch
* 2 cups fine oats (if they are too coarse grind them a bit)
* 1/3 cup good extra virgin olive oil
* 1/3 cup unsweetened soy, oat  or rice "milk" or freshly squeezed orange juice
* rice flour or oat flour (you can grind the oats)
* preheat the oven to 180ºC (356ºF) * line 2 trays with baking parchment * in a bowl mix everything very well except the rice or oat flour * add a couple of spoons of the flour and mix well * test to see if it is possible to roll a little ball in your hand that holds the shape * if not keep adding spoons of flour and mix well until you get a consistency that holds the shape * take 1 tablespoon of the mixture and roll it in between the palms of your hands * place on the prepared trays and flatten the biscuits * goes in the oven until golden *

now that you have this base you can experiment with different flavours ... here are some suggestions (if whatever you choose to add is sweet reduce the amount of sugar in the basic recipe) ... be adventurous and enjoy! :)

cinnamon + little apple pieces or grated orange rind + ground almonds (replace the flour with this) or chocolate chips or small pieces of walnuts or dried apricots cut in small bits or spices on their own (cinnamon, nutmeg, allspices, cardamom, ginger)

*bolachinhas de aveia vegan*
ontem fiz umas bolachas de aveia baseadas nesta receita mas com o objectivo de serem vegan ...

esta é a base ...
* 1/2 chávena de chá de açúcar mascavo ou demerara
* 1 colher de sopa de maizena
* 2 chávenas de chá de flocos de aveia finos (se forem muito grandes triturar um pouco)
* 1/3 da chávena de azeite virgem extra
* 1/3 da chávena de "leite" de soja, aveia ou arroz ou sumo de laranja natural
* um pouco de farinha de arroz ou de aveia (basta triturar a aveia até ficar em pó)
* aquecer o forno a 180ºC * forrar 2 tabuleiros com papel vegetal próprio para cozinha * numa tigela misturar bem todos os ingredientes excepto a farinha de arroz ou aveia * testar para ver se consegue formar uma bolinha com as mãos e esta mantem a forma senão ir juntando um pouco da farinha de arroz, ou aveia até a consistência permitir moldar uns bolinhos com as mãos * fazem-se bolinhos do tamanho de uma nóz que se colocam nos tabuleiros * espalmar e levar ao forno até estarem douradinhos *

agora que têm a base podem experimentar com vários sabores. aqui ficam algumas sugestões (se juntarem ingredientes doces reduzir a quantidade de açúcar na receita base) ... aventurem-se, experimentem e divirtam-se! :)

canela em pó + pedacinhos de maçã ou raspa de laranja + amêndoa ralada (a substituir a farinha) ou pedacinhos de chocolate ou pequenos pedaços de nóz ou pedacinhos de alperce seco ou especiarias (canela, nóz moscada, cardamomo, gengibre)
