orange marmalade

* orange marmalade *

* 1kg oranges
* 1 lemon
* 1kg sugar

* wash and dry the oranges and lemon
* pour 2 litres of cold water in a large wide pan
* squeeze the juice from the oranges and lemon and add to the pan
* discard the squeezed lemon and scrape all the orange pith and pips into a large square of muslin, tie the muslin with a bit of string to form a bag and add to the pan tying the string to the pan handle so it is easy to remove
* cut the orange peel into fine strips of only about half of the oranges and add to the pan
* bring to the boil, then reduce the heat and let it simmer, uncovered for 2 hours or until the liquid has reduced by about half and the peel is very soft
* remove the muslin bag squeezing out as much juice as possible back into the pan with the back of a wooden spoon
* add the sugar and stir until dissolved
* increase the heat and let it boil rapidly until it reaches setting point, about 20-25 minutes
* to test, remove the pan from the heat and spoon a little marmalade onto a chilled saucer. allow to cool for a few seconds and then push with your finger ... if the surface wrinkles then it is done otherwise boil for a further 5 minutes and test again
* leave the marmalade to settle for 15 minutes, then skim off any scum from the surface, stir and put into warm, clean jars using a jug
* cover and label

* marmalade de laranja *

* 1 kg de laranjas
* 1 limão
* 1 kg de açúcar

* lavar e secar as laranjas e o limão
* colocar 2 litros de água fria num tacho grande e largo
* espremer o sumo da laranjas e do limão e juntar à água
* deitar fora o limão e retirar toda a parte branca das laranjas e caroços para um quadrado grande de gaze, dar um nó a formar um saco e atar com um pedaço de fio que se ata à asa do tacho para ser mais fácil retirar depois
* cortar as cascas de cerca de metade das laranja em tirinhas muito finas e juntar ao tacho
* levar tudo a ferver, baixar o lume e deixar cozer destapado durante ± 2 horas até as cascas estarem macias e o líquido ter reduzido a metade
* retirar o saco de gaze, espremendo o máximo de líquido para dentro do tacho, com a ajuda de uma colher de pau
* juntar o açúcar e deixar dissolver mexendo sempre, aumentar a temperatura e deixar ferver durante cerca de 20-25 minutos até estar no ponto
* para testar o ponto, retirar a panela do lume e pôr uma colher de marmalade num pratinho préviamente arrefecido no congelador, empurrar com o dedo. se a marmalade fizer "rugas" está pronto, se não levar novamente ao lume mais uns 5 minutos e experimentar outra vez
* deixar repousar durante 15 minutos, retirar a espuma à superfície, mexer e encher com um jarro, os frascos préviamente lavados e aquecidos
* tapar e etiquetar
