breakfast





with apricot and nut teabread, fresh locally produced strawberries and soy drink with chocolate ...
good morning, have a lovely day! :)

*apricot and nut teabread* (from my old and first vegetarian recipe book)
125gr high fibre wheat bran cereal (All-Bran for example)
75gr dried apricots, snipped
300ml unsweetened apple juice or freshly squeezed orange juice
125gr wholewheat flour
2 teaspoons baking powder
75gr walnuts chopped

· place the All-Bran, apricots and juice in a mixing bowl, mix well, cover and let it rest for about 1 hour · stir the flour, baking powder and all but 1 tablespoon of the chopped nuts into the apricot mixture and beat thoroughly · turn into a greased and floured 500gr (1lb) loaf tin · sprinkle the rest of the nuts on top and bake in a preheated oven (180ºC / 350ºF) for 55 to 60 minutes (if the nuts start to brown halfway through loosely place a piece of greaseproof paper or foil on top of the tin) · turn onto a wire rack to cool ·

pequeno almoço com pão de alperces e nozes, morangos daqui e bebida de soja com chocolate ...
bom dia, que seja um óptimo dia! :)

*pão de alperces e nozes* (do meu primeiro, e velhinho livro de receitas vegetarianas)
125gs de All- Bran ou semelhante (muitos supermercados já têm alternativa de marca própria)
75gr de alperces secos, cortados aos pedacinhos
300ml de sumo de laranja ou maçã sem açúcar
125gr de farinha de trigo integral
2 colheres de chá de fermento em pó
75gr de nozes partidas ao bocadinhos

· colocar o All-Bran, alperces e sumo numa tigela, misturar e deixar repousar coberto durante 1 hora · juntar a farinha, o fermento e as nozes aparte de uma colher de sopa e bater bem · colocar numa forma de bolo inglês untada e polvilhada com farinha · espalhar as restantes nozes por cima e levar ao forno pré-aquecido a 180ºC durante 55 a 60 minutos (se a meio da cozedura as nozes começarem a ficar muito torradas colocar uma folha de papel de alumínio levemente por cima da forma)  ·
