*apricot and nut teabread* (from my old and first vegetarian recipe book)
125gr high fibre wheat bran cereal (All-Bran for example)
75gr dried apricots, snipped
300ml unsweetened apple juice or freshly squeezed orange juice
125gr wholewheat flour
2 teaspoons baking powder
75gr walnuts chopped
· place the All-Bran, apricots and juice in a mixing bowl, mix well, cover and let it rest for about 1 hour · stir the flour, baking powder and all but 1 tablespoon of the chopped nuts into the apricot mixture and beat thoroughly · turn into a greased and floured 500gr (1lb) loaf tin · sprinkle the rest of the nuts on top and bake in a preheated oven (180ºC / 350ºF) for 55 to 60 minutes (if the nuts start to brown halfway through loosely place a piece of greaseproof paper or foil on top of the tin) · turn onto a wire rack to cool ·
