made some lavender cookies for a special project . initially I thought they would taste peculiar ... but it was quite a sweet surprise . delicately fragrant they go particularly well with coffee .
* alfazema = lavender 

· lavender cookies ·

100gr salted butter at room temperature
100gr caster sugar
1 medium egg
1 teaspoon fresh lavender flowers finely chopped
200gr plain flour
1/4 teaspoon baking powder
pinch salt
+ flour to dust

in a bowl beat butter and sugar well until very light and fluffy
mix in the egg
add the remaining ingredients and combine very well until you have a soft dough
cover and refrigerate for at least 1 hour or until firm
when ready preheat the oven to 180ºC (356ºF)
remove the dough from the fridge and, working quickly, roll out on a floured surface (if you find this part difficult - as it is a bit too soft - just roll little balls of dough between your dusted hands and place these on a tray then press them with a fork)
cut the cookies as you like and place them on a tray dusted with flour
goes in the oven for about 12 minutes or until golden
remove from the oven and let them cool completely
it makes 12 large cookies (Ø8cm) or more if you cut them smaller

fiz umas bolachas de alfazema a propósito de um projecto especial . inicialmente pensei que iriam saber estranho ... but foi uma doce surpresa . delicadamente fragrantes ficam particularmente bem com café.

· bolachas de alfazema ·

100gr de manteiga com sal à temperatura ambiente
100gr de açúcar 
1 ovo médio
1 colher (chá) de flores frescas de alfazema picadas muito finas
200gr de farinha
1/4 colher (chá) de fermento em pó
uma pitada de sal
+ farinha para polvilhar

numa tigela bater muito bem a manteiga e o açúcar até ficarem esbranquiçados
misturar o ovo
juntar os restantes ingredientes e incorporar muito bem
tapar e levar ao frigorífico durante pelo menos 1 hora ou até estar firme
quando pronto aquecer o forno a 180ºC 
retirar a massa do frigorífico e, trabalhando rapidamente, estender a massa numa superfície polvilhada com farinha (se achar difícil esta parte - porque é um pouco mole - rolar umas bolinhas da massa entre as mãos enfarinhadas e colocar no tabuleiro achatando-as com um garfo)
cortar as bolachas como gostar e colocar num tabuleiro polvilhado de farinha
vai ao forno cerca de 12 minutos ou até estarem douradas
retirar do forno e deixar arrefecer completamente
dá para cerca de 12 bolachas grandes (Ø8cm) ou mais se cortar bolachas mais pequenas

but our lavender flowers will be a while,
they're hibernating for the summer.

in here they are getting dry, very dry like everything else ...
