THE WEEKEND CAKE



fridays of my childhood and teen years were always perfumed with the sweet scent of a cake baking in the oven . my mother would have one ready at the end of the day to last for the whole weekend . one recipe I found in her handwritten recipe book was that of a plain yogurt cake . a simple, lovely sponge cake . last friday I recalled those long gone days and made her yogurt cake to which I added some coconut

yogurt + coconut sponge cake 

1 coconut flavoured yogurt (125gs) ... the container will serve to measure the rest of the ingredients
6 large eggs
2 1/2 measures* of sugar
3/4 measures* sunflower or corn oil
1 measure* of dessicated coconut + extra to finish
3 measures* plain flour
2 teaspoons baking powder
* the yogurt container

. preheat the oven to 170ºC
. oil and flour a large baking tin (I used a Ø26cm tin with a hole in the centre)
. beat the egg yolks and sugar until very pale and fluffy 
. slowly and without beating, add the yogurt, oil and dessicated coconut
. sift the flour and baking powder together
. fold into the cake mixture very gently and without beating
. whisk the egg whites until they form soft peaks 
. very gently fold in the egg whites until lightly incorporated
. carefully transfer into the prepared baking tin
. sprinkle some dessicated coconut on top
. goes in the preheated oven for about 1 hour (test by inserting a skewer into the cake . if it comes out
  clean it is ready)
. let it cool for a few minutes and remove from tin

if you want you can leave out the coconut and use plain yogurt to make the basic recipe ... or you can choose other flavoured yogurt . enjoy! :)


as sextas-feiras da minha infância e juventude tinham o perfume doce de bolos feitos em casa . a minha mãe fazia sempre um bolo para o fim de semana . uma das receitas que se encontram no seu livro de receitas escrito à mão é a do bolo de iogurte . um bolo simples e delicioso . na sexta relembrei esses dias longínquos ao usar essa receita à qual acrescentei coco ralado 

bolo de iogurte + coco ralado

1 iogurte de sabor a coco (125gr) 
6 ovos grandes
2 1/2 medidas* de açúcar
3/4 medida* de óleo de girassol ou de milho
1 medida* de coco ralado + um pouco para polvilhar no final
3 medidas* de farinha sem fermento
2 colheres (chá) de fermento em pó
* o copo do iogurte

. ligar o forno a 170ºC
. olear e polvilhar uma forma grande de bolos (usei uma de Ø26 cm com buraco)
. bater muito bem as gemas com o açúcar até ficar esbraquiçado e leve
. sem bater mais adicionar o iogurte, o óleo e o coco ralado com cuidado
. peneirar a farinha e o fermento 
. juntar com muito cuidado, mexendo de baixo para cima, à massa do bolo
. bater as claras em castelo e juntar com muito cuidado ao preparado 
. colocar na forma e polvilhar um pouco de coco ralado por cima
. vai ao forno durante cerca de 1 hora (inserir um palito no bolo, se sair seco está pronto)
. deixar arrefer um pouco e desenformar

a receita base não leva coco ralado e o iogurte usado é natural ... mas podem usar outros sabores a gosto. divirtam-se! :)
