TOMATO JAM



yesterday I made tomato jam [ I find myself spending a lot of time in the kitchen these days ... which is soothing and good! :) ] . tomato jam is quite traditional in portugal but it was the first time I made it . get 2kgs tomatoes . wash, clean, peel and remove seeds and juice . weight the flesh and place in a large wide pan . add a bit less than 1/2 of the weight in preserving sugar (I like to use preserving sugar simply because it takes less time to reach setting point and one can use less sugar) . add a couple of cinnamon sticks to the pan and let it simmer stirring occasionally, until setting point* is reached . place in thoroughly clean and dried warm jars and close immediately . it goes very well with crackers and some types of cheese such as cheddar . enjoy! :)

 * to check setting point: after about one hour simmering test by placing a spoonful of jam in a saucer and push it with your finger . if it wrinkles it is ready

 ontem fiz doce de tomate [ tenho passado bastante tempo na cozinha ultimamente ... o que é bom e terapêutico! :) ] . foi a primeira vez que fiz doce de tomate . usei 2 kgs de tomate que limpei, descasquei e retirei o líquido e as sementes . pesei o tomate e coloquei num tacho largo . juntei um pouco menos de metade do peso em açúcar para compotas (gosto deste açúcar porque, apesar de ser mais caro, reduz o tempo para atingir o ponto e pode-se usar menos açúcar) . juntei ao tacho 2 paus de canela e deixei ferver em lume brando, mexendo de vez em quando, até atingir o ponto de estrada* . coloquei em frascos limpos, secos e mornos e fechei de imediato . é óptimo com queijo tipo flamengo e bolachas de água e sal . divirtam-se! :)

* ponto de estrada: num pires colocar um pouco do doce . se ao passar o dedo abrir uma "estrada" que se mantém está pronto

I have never even heard of tomato jam before! I think I am bound to like it as I love tomato. adisappointing year for my tomatoes but for future - thanks for the tip.
