AN EXTRAORDINARY CAKE



As mentioned in yesterday's post I baked a very peculiar chocolate cake . A no flour gluten free no dairy no added fat cake very easy to make and very delicious . The recipe is from this recently discovered lovely food blog but I will write the recipe below just for the records . I divided the batter into two small loaf pans so I could offer one little cake to a friend as well as keeping one for myself . I offered it wrapped in parchment paper and included the handwritten recipe . . .  Enjoy!

Black bean chocolate cake

1 cup/240 g cooked black beans (or 1 400 g/14 oz can black beans, drained)
3 large eggs
1/2 cup/100 g sugar
3 heaping Tbsp cocoa powder
1 tsp instant coffee or 1 espresso shot
1/2 vanilla pod, scraped (I didn't use it as I didn't have it)
1 tsp baking powder
Juice and zest from 1/2 organic orange
A pinch of salt
1/2 cup/50 g dark chocolate 70%

* Preheat the oven to 350 °F/175 °C
* Mix all the ingredients in a blender, except the dark chocolate, until it is smooth and free of any lumps.
* Pour the batter into a parchment lined loaf pan (yes the batter is very liquid), chop the dark chocolate and spread it across the surface, some of the chunks should fall into the batter or else help it with a teaspoon, in order to get chocolate inside the cake as well.
* Bake the cake for approximately 35 min and set a side to cool completely before removing it from the pan.


Como referido no post de ontem fiz um bolo de chocolate muito peculiar . Um bolo sem farinha nem gluten nem produtos lácteos nem gordura acrescentada super fácil de fazer e delicioso . A receita tirei deste blog que encontrei recentemente mas traduzo aqui em baixo . Dividi a massa por duas formas de bolo inglês pequenas para poder oferecer um bolo a uma amiga e ficar com um para mim . Ofereci-o embrulhado em papel vegetal e juntei a receita escrita à mão . . .  Divirtam-se!

Bolo de feijão preto e chocolate

240gr de feijão preto cozido (ou 1 lata pequena 400gr passado por água e bem escorrido)
3 ovos grandes
100gr açúcar
3 colheres (sopa) cacau em pó
1 colher (chá) café instantâneo
1/2 vagem de baunilha raspado o interior (eu não usei porque não tinha
1 colher (chá) fermento em pó
Sumo e raspa de meia laranja
Uma pitada de sal
50gr chocolate preto 70%

* Aquecer o forno a 175ºC
* Bater todos os ingredientes, excepto o chocolate preto com a varinha mágica até obter uma massa líquida e sem grumos.
* Verter a massa numa forma de bolo inglês forrada com papel vegetal, partir o chocolate aos pedaços e espalhar por cima da massa, alguns dos pedaços de chocolate vão ao fundo.
* Levar ao forno durante cerca de 35 minutos. 
* Deixar arrefecer e desenformar.
