RAINY MONDAY BREAKFAST



Yesterday . at the end of what turned out to be a rather long and challenging week . I baked! . A way for me to unwind . I baked a honey loaf + a very peculiar chocolate cake (more on this one later) . Today it has gone back to the cold and rain . The intermittent weather these days .

Honey loaf

* 25gr fresh yeast
* 1 tsp sugar
* 1/2 cup lukewarm water
* 3 Tsp honey
* 1/2 cup whole milk (you can use soy milk)
* pinch sea salt
* 150gr oats
* 350gr all purpose flour

In a little bowl crumble the yeast, add the sugar and water.
Gently warm the honey, milk and salt (don't let it boil, just to get nicely warm).
In a large bowl place the oats and the honey mixture.
Add the yeast and half the flour.
Mix very well while adding the remaining flour.
Knead until the dough is smooth.
Cover with a clean cloth and let it rest in a warm place for about 1 hour.
Oil a loaf tin.
On a floured surface knead the dough again for about 3 minutes, shape it into a roll and place it into the prepared tin.
Cover with the cloth and let it prove in a warm place until it has doubled in size.
Preheat the oven to 200ºC (390ºF).
Uncover the loaf and bake in the hot oven for 15 minutes, then lower the temperature to 170ºC (338ºF) and bake for another 25 minutes.
Let it cool and remove from the tin.

Ontem . ao final de uma longa semana . fiz bolinhos! . Uma forma, para mim de desanuviar . Fiz um pão de mel + um bolo de chocolate peculiar (sobre este voltaremos mais tarde) . Hoje voltou a chuva e o frio . A intermitência do tempo por estes dias .

Pão de mel

* 25 gr de fermento de padeiro
* 1 colher (chá) açúcar
* 100ml de água tépida
* 3 colheres (sopa) mel
* 125ml de leite (pode ser de soja)
* uma pitada de sal do mar
* 150gr flocos de aveia
* 350gr farinha sem fermento

Numa tigela pequena desfazer o fermento com o açúcar e a água.
Amornar o mel, leite e sal (não deixar ferver, é só mesmo para amornar).
Numa tigela grande colocar os flocos de aveia, a mistura de mel, o fermento e metade da farinha.
Amassar bem enquanto vai juntando o resto da farinha até ter uma massa uniforme e macia.
Tapar a tigela com um pano limpo e deixar repousar durante 30 minutos num local aquecido.
Untar uma forma de bolo inglês com óleo.
Numa superfície polvilhada de farinha amassar bem a massa durante 3 minutos, dar a forma de um rolo e colocar na forma preparada.
Cobrir com o pano e deixar levedar num sitio aquecido até ter o dobro do tamanho.
Aquecer o forno a 200ºC.
Levar o pão ao forno assim quente durante 15 minutos, depois reduzir a temperatura para 170ºC e deixar cozer durante mais 25 minutos.
Deixar arrefecer e desenformar.
