the ingredients


. for a delicious sticky figgy loaf I used to bake quite often but haven't done for a while ... the recipe:

. 100gr dried figs, hard stalks removed and coarsely chopped
. 50gr demerara sugar
. 100gr wheat bran breakfast cereal such as All-Bran
. 1 tbsp clear honey
. 300 ml milk
. 100gr self raising flour + 1 spoon for dusting the tin
. oil for greasing the tin

. in a large bowl put together figs, sugar, cereal, honey and milk .
. mix well, cover and leave to stand for about 1 hour .
. preheat the oven  to 180ºC .
. thoroughly oil a medium size loaf tin and dust it with a spoon of flour .
. uncover the cereal/fig mixture, sift in the flour and mix very well with a wooden spoon .
. place in the prepared tin .
. goes in the oven for 45-50 minutes until risen (doesn't rise much) and firm to the touch .
. if necessary lightly cover the loaf halfway through with foil to avoid it over browning on top .
. leave the loaf to cool until slightly warm and wrap in foil until the next day .
. it will keep for a few days in an airtight container.
. serve with butter or cheese .
